Pork Belly Stir fry!
Hungry, anyone? Get your pork belly fix in a flash with this easy stir fry! 🤤
INGREDIENTS:
600g pork belly strips
1 roasted sweet potato
1 roasted parsnip
1 large handful of spinach
1 leek, rinsed and sliced
handful of flat leaf parsley
chilli flakes (optional)
Cut the pork belly into 5cm cubes and fry in a pan with coconut oil until brown and crispy, then transfer to a bowl. Add the rest of the ingredients to the pan and stirfry until soft, then add the pork belly back to the pan until warm.
Season with salt & pepper.
