Pork Belly Stir fry!

Hungry, anyone?⁣⁣ ⁣⁣ Get your pork belly fix in a flash with this easy stir fry! 🤤⁣⁣


INGREDIENTS:

  • 600g pork belly strips⁣⁣

  • 1 roasted sweet potato⁣⁣

  • 1 roasted parsnip⁣⁣

  • 1 large handful of spinach⁣⁣

  • 1 leek, rinsed and sliced⁣⁣

  • handful of flat leaf parsley⁣⁣

  • chilli flakes (optional)⁣⁣

Cut the pork belly into 5cm cubes and fry in a pan with coconut oil until brown and crispy, then transfer to a bowl.⁣⁣ ⁣⁣ Add the rest of the ingredients to the pan and stirfry until soft, then add the pork belly back to the pan until warm.⁣⁣


Season with salt & pepper.
