Got leftovers? One word. Omelette.

Last night for dinner I made pork chops with veggies.


It was delicious.


I also had a leftovers (chop, roast zucchini, roast pumpkin and broccoli).


So this morning for breakfast I diced up my leftover roast dinner, pan fried it in some butter and turned it into a totally delicious omelette.


Omelettes really are the most versatile meals...I'm sure I've posted about the all the virtues of the humble omelette before...but it's worth doing again!



Omelettes are one of those meals that are great regardless of the time of day; breakfast, brunch, lunch or dinner - they work.


As for fillings....well....you can keep it super simple and just add a little bacon and tomato, or go more gourmet with chorizo, olive, spinach and feta. The options and combos are limitless!


Instead of just reheating last nights dinner, why not transform it into a brand new meal, simply by wrapping it up in a egg! So easy yet so eggciting!
