Super Greeny, Sour Creamy Avocado Halves
Avocado with Sauteed Greens, Sour Cream & Crispy Bacon
Ingredients
2 tablespoons coconut oil
1/4 medium leek thinly sliced
4 large silverbeet or kale leaves thinly sliced
1 large avocado
full fat sour cream
2 rashers bacon cut into small pieces
sea salt
freshly ground black pepper
Method
Melt coconut oil in a pan and fry bacon till it's crispy then remove from pan
Add leek and silverbeet to the pan and saute until soft (season with salt / pepper)
Cut avocado in half, remove seed and spoon leek and silverbeet into each half
Spoon on a generous amount of sour cream
Top each avocado half with crunchy bacon and a grind of pepper
Grab a spoon and dig in!
