Semi Dried Tomatoes
Hey all.
I'm always adding yummy things to jazz up my salads and these little gems are perfect!
SEMI DRIED TOMATOES!
These are super easy to do.
Grab a punnet of cherry tomatoes or grape tomatoes, cut them in half longways & lay them in a baking tray skin side down so that the inside of the tomato facing up. Then drizzle the tomatoes with some really lovely high-quality olive oil & a nice sprinkle of salt and rosemary and pop them in the oven.
I like to really slow roast them as it keeps a nice, sweet flavour and lovely and juicy.
So these go in a really low oven, 120C for anywhere between 30 & 60 minutes depending on how soft or crunchy you prefer the texture to be.
Once they've cooled you put them in a little glass jar or container and pop them in the fridge for 5 to 7 days.
Then you can just grab out a little handful & toss them through your salads or with a cheese platter or through pasta - they're great with some balsamic vinegar as well.
