Coconut Cereal

Hey all.


So what's the go with breakfast cereals? Are they really as healthy as the marketing and ads featuring all manner of athletes would have us believe?


Made from grains, gums and sugars, there’s nothing smart about cereal for breakfast, no matter how cleverly it's marketed. Yes, even cereals with the Heart Healthy Claims are loaded with sugars and processed junk, but because they have a few grams of fibre or are low in fat (big deal), they are promoted as health foods.


If you're looking to clean up your diet and improve your gut health then one of the most impactful choices you can make is to remove processed food from your diet. There is basically no such thing as a healthy cereal! They’re ALL processed & offer very little if no nutritional value at all.


But, you can easily make your own healthy 'cereal'!

This little recipe is really versatile! Enjoy it with:

  • your milk of choice for breaky

  • yogurt

  • coconut yogurt

  • fresh cream

  • fresh fruit, or

  • simply snack on it during the day


INGREDIENTS

  • 6 cups of coconut flakes

  • 3 cups of mixed dried fruit cut into bite-sized pieces (eg dates, figs, mulberries, cranberries, goji berries, etc)


METHOD

  • Preheat over the 160C

  • Put all ingredients onto an oven tray and into the oven for about 20 minutes

  • Stir every 5 minutes to ensure coconut chips are cooked evenly

  • Take out and allow to cool before storing in an airtight container
