Baked potatoes with bacon and sour cream

Sweet As Baked Potatoes

INGREDIENTS
 

 
4 sweet potatoes or potatoes (or both)
 
Olive Oil
 
Salt
 
4 rashers bacon, diced
 
Butter
 
Cheese (optional)
 
Sour cream
 
Spring Onion

METHOD

Preheat oven to 200C.
 

 
Place potatoes in a bowl and toss with oil and salt until well coated, then place on an oven tray and cook for 45mins or until soft (sweet potato will cook faster).
 

 
Pan fry bacon until crunchy then set aside.
 

 
Once potatoes are cooked, crack 'em open and stuff with loads of butter, cheese and bacon, top with a big dollop of sour cream and a sprinkle of spring onions - YUM!
